Her alluring face and flawless body figure impressed countless audiences in China, Hong Kong and Taiwan. Yet, at this very moment, she just wants to convey her true self in her apron, and put aside fashion and the runway. There’s definitely more than meets the eye – one can exude charisma beyond good looks. With Coco, it’s through her balancing act as a loving mother and attaining the prestigious culinary qualification, the Grand Diplôme at Le Cordon Bleu.

Having spent 9 months in London to complete the Le Cordon Bleu course, Coco said it’s was not an easy decision, “That was the very first time for me to go study abroad on my own! I even had to leave my baby girl behind in Hong Kong. Being away from her was one of the most challenging factor I had to endure during those 9 months.” Apart from homesickness, another challenge for Coco was to keep up with the cooking standards. “Strive for perfection” has since become the ultimate lesson Coco took away from her experience there. She has to make sure everything is served at the right time, with the right portion at the right temperature. “Everything should look perfect on the dish, even if it’s just the vegetable garnish! Once I was asked to put a piece of lettuce underneath some salad. I picked a piece out of the vegetable basket and submit my work. Yet my instructor challenged me, ‘The lettuce looks slightly yellowish on one of its sides, why don’t you trim it into a perfect round shape before putting it there?’ The amount of effort they put in to maintain the standard left a deep impression on me. Since then, it is a discipline I try to foster when I cook in my own kitchen.” Coco would double check all the plating details before serving her dish to her family.

Since her return to Hong Kong after graduating, Coco hasn’t stop thinking about cooking. “The word ‘passionate’ isn’t enough to convey my feelings towards cooking. Studying in Le Cordon Bleu made me discover my true calling. I feel like I was born to be a chef!” The experience has affirmed Coco on what to pursue next, and she’s certain it will be her lifelong goal. Other than being a certified chef, Coco wants to be a perfect mum too. She left her then 15 month old girl and went abroad; she admits it was a reckless decision. “Now I want to stay with my baby girl all the time, and give her more warm and loving childhood memories. She started to talk not long ago, and it gives me so much joy to communicate with her every day. It's priceless to see my baby girl grow and change day by day.” It is important to strike a balance between her own passion and her family. Although Coco dreams about cooking and designing new dishes, she is still determine to dedicate as much of her time to her daughter as long as the baby is awake. “I’ll go straight to the kitchen and start working after I put her to bed, and there are many times that I finish my dish in the middle of the night!”

Coco shared in details about her culinary journey in her book “Call Me Chef - Coco Chiang’s Le Cordon Bleu Diary”. In the near future, she would love to produce a cooking programme as well. “I have my own standard about a ‘food show’. A good food show is not about showing off the cooking techniques or the detailed procedures. I want to create a programme which could arouse the audience’s’ appetite towards a dish, or ignite their passion for cooking that dish! It’s not very meaningful for me to just ‘describe’ how nice the food is. A good programme host should be able to show the audiences that he or she is tasting the dish with great enjoyment and excitement.” In the meantime, fans shall wait patiently in anticipation to see Chef Chiang in her Le Cordon Bleu attire, showcasing her culinary skills on screen.
